  AMERICANA, CREOLE, CAJUN,

  AND CARIBBEAN

 

PRIME RIB AND BEEF ROAST SUPREMO      

This robust blend is exclusively for cuts of beef such as top sirloin roast, beef round, chuck or pot roast, prime rib roast, etc.  You can rub it on and marinate overnight or put it on the day you cook.  It leaves behind a wonderful flavor base in the pan with beef juices for the beginnings of a fine au jus or sauce.

INGREDIENTS:  Dried shitake mushrooms, dried onion, carrot, garlic tomato, ginger, thyme, basil, shitake mushrooms, oregano, marjoram, beef extractives, salt, and black peppercorns.

      LE GRANDE ROTISSERIE SEASONING   

The perfect touch for roast chickens, game hens, turkeys, ducks, geese or boned, rolled and tied pork roasts, especially on your rotisserie.  Use liberally inside and out and then give your poultry choice a luscious mopping of melted butter and dry white wine for a fragrant treat deluxe.

INGREDIENTS:  Dehydrated green and red bell peppers, carrot, onion, garlic, spinach, parsley, orange peel, white pepper, cumin, tumeric, lemon, salt and other spices.

     JUST UP THE RIVER BRAND    

 CAJUN SPICE

A short paddle up stream from Loosieanna and you've got our version of that classic taste.  We dedicate our blend to all of our fine neighbors down south who have brought such wonderful delicious, vibrant flavor to kitchens everywhere.

INGREDIENTS:  White pepper, black pepper, cayenne pepper, thyme, oregano, basil, crushed red chili, garlic, onion, salt, paprika, celery seed, bell pepper, other herbs and spices.

Garden of Eden Seasoning  

This blend is simply a bright, lemon-garlic pepper flavor with a hint of onion.  Very versatile and useful in many applications.  Add to flour or bread crumbs for breading, delicious in all pasta, potato, rice and vegetable recipes.  Add to melted butter for a baste.  Flavorful as marinade for chicken or turkey.  Excellent for jumbo bacon-wrapped shrimp on the grill, or garlicky lemon-pepper steak.

INGREDIENTS:  Lemon juice, lemon peel, thyme, garlic, onion, salt, black and white peppercorns and parsley.

 YANKEE BOY JAMAICAN JERK

 SEASONING

This is a fun, full-flavored seasoning lending itself well to pre-rubbing-prep for meats on the BBQ grill.  Marinate overnight or just a few hours before grill time;  then a squeeze of lemon or lime.  You'll have to provide the steel drums, mon!     HOT

INGREDIENTS:  Jamaican allspice, ginger, garlic, onion, lemon, paprika, salt, sugar, cayenne pepper, thyme, cloves, red chili, brown mustard, black pepper and Worcestershire.

LAVENDER QUEEN BLACKENING SPICE

Can't make it to Mardi Gras?  Our Lavender Queen will give you a boost!  For grilled or pan-blackened steak, you can't go wrong.  This blend is alive with earthy flavors and pungent aroma.  Not limited to use on steak, so go for it.  We promise, there won't be any culinary police!

INGREDIENTS:  Onion, celery, bell pepper, paprika, salt, lavender, garlic, fennel, thyme, black, white and cayenne pepper, other spices.

BAYOU HEAT         

Mix together a little zydyco, Dixieland, browning roux, piquant herbs and spices, sizzling white wine and seafood and you've got a jar of Creole delight with our Bayou Heat Blend.  Use for jambalaya, shrimp sauce piquant, crawfish etouffee, pan BBQ shrimp, fish broil, steamed mussels Creole style.  This blend is spicy.  Special thanks go to Rima and Richard Collin for their inspiration.

INGREDIENTS:  Bay laurel, basil, thyme, rosemary, paprika, salt, garlic, onion, celery, black and cayenne pepper, allspice, cloves, lemon, tomato, other herbs and spices.

JETTY PARK FISH AND SHELLFISH

SEASONING 

This subtle blend was mixed up with baking and broiling fish or shellfish in mind.  Inspired by the bright, sweet, rich flavors found in Florida's many seafood restaurants, we dedicate this seasoning to special memories of the Atlantic Coast.

INGREDIENTS:  Lemon, white and black pepper, onion, salt, sugar, dehydrated Worcestershire, paprika, dehydrated vegetable shortening, garlic, and other herbs.

       4 oz.                          8 oz.

                                              

 

COUNTRY ROAST PORK SEASONING    

Traditional, clear-cut, mid-western flavor for your pork roasts, chops, homemade breakfast sausage, poultry stuffing, sausage gravy for biscuits, pork gravy or pork tenders.

INGREDIENTS:  Kosher salt, onion, cayenne pepper, black and white pepper, sage, sugar, parsley, thyme, savory and green cardamom.

TIMMI'S            

BREAD AND SALAD SHAKE

A full-flavored blend you can simply shake on any salad to enhance or onto toasted breads, buns, garlic bread or homemade croutons for salad.

INGREDIENTS:  Dehydrated onion, dehydrated garlic, paprika, romano cheese, parmesan cheese, lemon, sesame seed, mustard seed, poppy seed, oregano, parsley and other herbs and spices.

             OLD- FASHIONED ALL-PURPOSE

POULTRY SPICE

This very aromatic blend can be used to season chicken, turkey, duck, goose, game hens, grouse, partridge, pork roast, sausage gravy, stuffings/dressings or seasoning flour for fried chicken.  A classic favorite.

INGREDIENTS:  Thyme, sage, salt, nutmeg, fennel, allspice, white pepper, mustard, savory, onion and parsley.

SUTTER'S KITCHEN BAKING SPICE

This blend is dedicated to my Grandma and Grandpa Sutter who were two of my earliest sources of inspiration in the kitchen.  A very sweet, fragrant combination of spices, excellent for baking rolls, breads, muffins, cakes, pies and cookies.

INGREDIENTS:  Cinnamon, nutmeg, green cardamom, cloves, ginger and almond.
